Scottish Highlands are considered a Heritage breed. Heritage livestock breeds are typically historic and/or rare breeds that have fallen out of favor with today's modern industrial farming practices. Highlands are fondly known as the Grande Olde Breed since they can be traced back to the 6th century.

Highland Craft Beef is the farm's brand of beef that is healthy, nutritious and flavorful. Highland Craft Beef is produced utilizing sustainable and regenerative agricultural practices. To this end, the farm utilizes pasture based livestock systems that protect our environment and provide significant health benefits to both humans and animals
